May 5 is upon us and that means Cinco De Mayo. The holiday marks the Battle of Puebla in 1862 when the Mexican army had a victory over the French army. While considered to be a somewhat minor holiday and celebration in Mexico, the date has grown very popular in the United States. And for many, that means enjoying a delicious meal. 

I'm not of Mexican decent, but I do love learning about other cultures, and their history and cuisine. Although a lot of items we lump into the category of Mexican food have been altered and have American influence, some things are too delicious to pass up.

I've already shared my great love of margaritas and a recipe with you back on National Margarita Day (yes, it's real, and yes, it's fantastic), so I thought it might be fun to share an easy recipe for guacamole.

2 avocados
1 small onion, finely chopped
1 clove garlic, minced

1 ripe tomato, chopped
1 lime, juiced
salt and pepper to taste

Directions: Peel and mash avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for half an hour to blend flavors.
