You see food trucks everywhere these days, but not long ago, they were a rare sight.
Food trucks were hard to find in Minnesota until 2010. That year, Minneapolis issued 10 food truck licenses, all restricted to the Nicollet Mall area. Since then, the food truck scene has exploded.
Today, food trucks are a common sight across the state. They're so now that there are entire festivals dedicated to them, like the Eagan Food Truck Festival, happening Friday, August 8.

Everything You Need To Know About the Eagan Food Truck Festival
The festival takes place on Friday, August 8th, from 4:00 PM to 9:00 PM at the Eagan Central Park Festival Grounds, located at 1507 Central Parkway in Eagan.
The space is well-equipped with 75 picnic tables, indoor and portable restrooms, water fountains, a splash pad, a playground, bike racks, walking trails, and a drop-off area for guests with mobility needs.
Feel free to bring a lawn chair or picnic blanket to relax and enjoy the evening. Guests will enjoy music from local DJ and producer TRIZ, and a live set from PopROCKS.
Quench your thirst with everything from local brews and domestic beers to hard seltzers and mocktails. Just remember to bring a valid ID if you plan to drink (21+ only).
And of course, there will be plenty of food. 24 food trucks are scheduled to be on-site so even the pickiest of eaters will be able to find something they like. And, there will be plenty of options for all kinds of diets, including gluten-free, vegetarian, and vegan choices.
