This has to be the neatest thing I've seen on the internet today. Artisan Plaza in Cannon Falls is offering up a really unique class on February 6th, in which those in attendance will learn about butchering hogs, and to give you "the knowledge of which cuts work best for your cooking style, method of sale, or customer base."

The event, which was shared on the Minnesota Farm Direct Facebook group, which by the way is one of the best places to find market-fresh food like pork, beef, eggs, etc.

The class, which is titled as 'Hog - Whole Animal Breakdown' on Facebook, gives those looking at the event a unique description in the details section.

"Watch as two sides of pork are broken down into primals and subprimals with only a knife and hand saw. We’ll explore how to select your cut list by discussing different approaches to each subprimal including the head, shoulder, loin, belly, ham, and sirloin. With each cut, we’ll weigh the pros and cons of the various options and cooking methods. Whether you’re a farmer, homesteader, or avid foodie you’ll take away the knowledge of which cuts work best for your cooking style, method of sale, or customer base."

Covered in the class will be the following topics:
  • Whole Animal Breakdown to Primals
  • Primals to Subprimals - Different Approaches for Fresh Cutting
  • Smoking, or Grinding Subprimal Options
  • Bone In vs Bone Out
  • Roasts vs Steaks
  • Uncommon Cuts

The class will be held at 2pm Saturday February 6th at the Artisan Plaza in Cannon Falls according to the Facebook page, tickets to attend the event are available to purchase here.
