New Minnesota Restaurant Now Ranked Among the Top 20 in the Nation

Oro by Nixta in Minneapolis was selected as one of the 20 best new restaurants in the country. 

Kate and Gustavo Romero opened Oro by Nixta, "A full-service masa kitchen dedicated to promoting corn from overlooked side dish to star of the show." in 2023.

"Corn Evangelist" Chef Romero explains the restaurant's mission is to help save heirloom Mexican corn and to "celebrate the power of corn, prepared in diverse ways with seasonal ingredients..."

Bon Appétit's write-up says, "Oro’s casual paper menu is designed to enlighten, educating diners on varieties of mole, salsas, and other ingredients and describing how nixtamalization allows hard kernels of corn to transform into supple dough. With their anti-pretentious approach, chef-duo Gustavo and Kate Romero invite their diners to marvel at the diversity of Mexico’s heirloom corn options and to be thrilled by the way it anchors a beautiful meal"
