
MN Egg Lovers: Don’t Boil and Forget!
HARD-BOILED EGGS
I hate wasting food; but it happens. For about a month, I've been on a boiled egg kick; I was eating some every single day. Since that was happening, I thought I'd be a time saver, and fixed a whole package a couple weekends ago.
I looked in the fridge yesterday and realized that I still have half a dozen! I'm thinking...Hmmm...They are still in the shell. They've been in the fridge this whole time. Are the eggs still good? If so, how long ARE boiled eggs in the fridge good for? A month? Three weeks?
Not as long as I thought they would be. Here's what the FDA says about eating hard-boiled eggs.

CAN YOU FREEZE HARD-BOILED EGGS?
This would be great, wouldn't it? Boil the m then freeze them right away. You could grab a couple before you left for work, and they would be thawed out before lunch!
Unfortunately, the FDA does NOT recommend freezing eggs in or out of the shell. They say that the eggs will become watery, and the whites will be tough.
CAN YOU EAT BOILED EGGS THAT ARE TWO WEEKS OLD?
Much to my surprise, it is NOT recommended that you eat hard-boiled eggs after one week. You should toss out any eggs that have been hard-boiled after one week. You CAN get sick from eating bad eggs. The FDA says most people show signs of food poisoning within one to three days of eating contaminated food and might have flu-like symptoms, abdominal pain, or vomiting. No fun.
HOW DO YOU KNOW IF HARD-BOILED EGGS ARE BAD?
If the eggs are bad, they may smell bad, or have a change in texture that could be slimy or chalky. Don't risk it. Through them out.
